Road Trip!

This weekend was one of being in the car… a lot… a whole lot. By the time the weekend was over, I think we clocked about 13-14 hours in the car in a 2.5 day period. Now don't get me wrong, we had A LOT! of fun! We are definately some tired people today, but hey, it's that what a good weekend results in?
 
Today is Forrest's first day of his new job and we are so excited! We probably spent a good 8-9 hours of our road trip discussing what we wanted to do with our little house and our hopefully future home. From decorating to vacations and everything in between there was no topic uncovered!
 
Since we are still trying to be healthy here is the breakdown of our food choices this weekend:
 
Friday night: Steak, Alfredo, and veggies. While Forrest overate a little (and to be honest I probably did too), I tried to focus on eating just the veggies. Not the healthiest option, but it's difficult to eat healthy when other people cook.
 
Saturday morning: Subway for breakfast… English muffin with no cheese/egg and steak and veggies… under 5 grams of fat… heck yeah!
 
Saturday lunch: Wawa… Forrest threw caution to the wind and got something completely unhealthy (to be fair… they really didn't have any healthy options that he cares for) But I had a turkey sandwich with reduced fat cheese and apples and strawberries… 5 grams of fat!
 
Saturday afternoon (the parties)… Cough cough… cupcakes, fried chicken (only 1 piece!) mac and cheese… with some veggies and full of fat dip mixed in… oh well… Everything was in small portions! Does that make it ok??
 
Sunday morning: We went to a local diner and Forrest yet again threw caution to the wind (again to be fair, they had 1 healthy option… 2 would be pushing it). So I got home fries and yogurt. When I ordered the yogurt I thought they would just bring me plain vanilla yogurt… nope… I can 2 containers of Trix Raspberry yogurt… high class I tell you.
 
Sunday lunch: McDonalds… Forrest got a grilled chicken sandwich and I got a Grilled Chicken Cesar salad. I asked for the fat free dressing but they gave me Cesar… we tried. At least neither one was the options that have 80+ grams of fat per one meal.
 
Sunday dinner: Chipotle… we both managed to get away for under 10 grams of fat, chicken and pork with veggies and no cheese! We did pretty good.
 
So this weekend we did a fairly good job… it is still going to take a lot more practice and some more dedication, but considering, job (fairly) well done!
 
So here is our meal plan for the week:
Tonight: Grilled pork and peppers medley (with an Asian inspired sauce)
Tomorrow: Spaghetti Squash Pasta salad with tomatoes, olives and basil
Wednesday: Butternut squash pizza (we're going to try this again since it failed miserably last week)
Thursday: Chicken pot pie with loads of veggies
Friday: Turkey burgers and Zucchini fries
 
So lets see how well we can do this week!
